Roasted Beets

Serves 4


1–1½ pounds  medium-sized beets
3 T  olive oil
1 T  fresh garlic
   salt and pepper

  1. Preheat oven to 375°.
  2. Mince the garlic.
  3. Peel and quarter the beets. Place them in one layer in a small roasting pan.
  4. Drizzle olive oil over the beets. Add the garlic.
  5. Salt and pepper to taste. Toss to combine.
  6. Roast about 30 minutes, until beets are tender.
