Roasted Beets
Serves 4
| 1–1½ pounds | | medium-sized beets |
| 3 T | | olive oil |
| 1 T | | fresh garlic |
| | | salt and pepper |
- Preheat oven to 375°.
- Mince the garlic.
- Peel and quarter the beets.
Place them in one layer in a small roasting pan.
- Drizzle olive oil over the beets.
Add the garlic.
- Salt and pepper to taste.
Toss to combine.
- Roast about 30 minutes, until beets are tender.
